Has anyone had prostatitis and found that after the full course of treatment and resolution of the infection that the prostate is more sensitive than before the infection?

Oh yes, I had this and it was what led me to Aneros by way of High Island Health as an alternative treatment. I also used herbs. I declined traditional medical treatment, because it is rough on your system and often does not work because there's bacterial and non bacterial prostatitis and there's no test to distinguish the types.

To answer your question, for me my prostate was not more sensitive after. It feels the same.

No change in sensitivity after prostatitis resolved.  Incidentally how I discovered these products years ago also.
